This year, I even started preparing recipes for our holiday meals to freeze them because I will be away from home for a while.
Similarly, when it comes to indulging in a sweet treat, I really wouldn’t consider opening a packet of industrial biscuits (unless they’re top quality and pretty local!).
It is for all these reasons that these madeleines are a perfect candidate to satisfy my sweet tooth: they require only a few ingredients and these are very basic. If you don’t have chocolate flakes, you can substitute chocolate chips.
The madeleines are placed in a very hot oven and the temperature lowered so that the famous little bump so recognizable develops.
It takes a little longer than opening a package and taking the biscuit out to eat it, but it’s infinitely better and the good smell that escapes from the oven is well worth the minutes spent preparing them 😜

Ingredients
- 5 eggs
- 210 g icing sugar
- 210 g butter
- 210 g of flour
- 8 g baking powder
- 90 g chocolate flakes
Instructions

Preheat the oven to 220°C.

Melt the butter and let it cool.

Put the eggs and the icing sugar in a bowl and whisk together until the mixture doubles in volume.

In a second bowl, mix the flour and baking powder then add them to the egg and icing sugar mixture.

Mix gently then add the melted butter.

Stir in the chocolate flakes and put the dough in a piping bag.

Bake and lower the temperature to 180°C.

Let cook for 20 minutes.
