We start this week with a little seasonal dessert, easy to make and rather comforting. I still have a lot of apples left from my home harvest in September. I have carefully stored them in my cellar where they wait in the cool to wait for the moment when they will be devoured! So it was the perfect time to embark on a new project.
These baked apples with dried fruits are very tasty, it’s the kind of recipe to have on hand when you don’t have too many ideas. Apples are a bit of an all-terrain fruit, as good to eat as they are to cook. Personally, I always have a good choice of dried fruits in my cupboards to counter any untimely craving for a slightly crunchy recipe.
The apples are cut in two thirds and once the cap is removed, they are hollowed out. For example, you can use a melon baller and extract small balls of flesh. These will then go to the pan with the dried fruits and the maple syrup and the whole will caramelize slightly. Fill the hollowed-out apples with the mixture, put their hats back on them and put them in the oven for about fifteen minutes.
It’s full of flavor and delicious. If you wish, you can even add a scoop of vanilla ice cream when serving: good start to the week!

Ingredients
For the baked apples with dried fruit:
- 6 apples
- 15 g pistachios
- 15 g almonds
- 15 g hazelnuts
- 15 g pine nuts
- 15 g nuts
- 1 Pat of butter
- 4 tablespoons maple syrup
For the apple coating:
- 100 g caster sugar
- 50 g butter or ghee
Instructions

Preheat the oven to 150°C.

Wash the apples without peeling them and cut the caps on about ¼ of the height of the apple.

Remove the cores using an apple corer.

Hollow out the flesh with a melon baller and set aside.

Melt the 50 g of butter in the pan and roll the whole apples and the hats in it then roll them in the sugar.

Place the apples in a baking dish and set the caps aside.

Heat the pan again with a knob of butter then add the apple flesh, dried fruit and maple syrup.

Allow the mixture to caramelize slightly then remove from the heat.

Garnish the apples with this mixture then place the tops on each apple.

Bake for 15 minutes, serve immediately.
